Our Mission:

Our mission is to share the benefits and pleasure of traditional Japanese fermented food with people all over the world. I have been always having some issues with my gut health, and so as my son. One day I noticed that when I eat a lot of wheat, I am feeling not well in my gut and then I get tired very quickly. So I tried many diet, and I finally found out that drinking Amazake in the morning boost my gut health greatly.

Me and my son,( has a lots of allegies) have been drinking Amazake everday and our digestion system works perfetcly!!! Actually, this makes our lives totally different.

So I wanted to share the benefit to people from all over the world, who has interested in their health,

Home made KOJI

Making KOJI at home.

・Whai is KOJI?

Koji is a molded called Aspergillus oryzae is added to rice, barley, or soy beans.. Kōji is used everyday life in japan for more than 2000years.

This is an ingredient in making many Japanese foods and drinks such as: sake, mirin, miso, vinegar, pickles, soy sauce,etc etc.

AMAZAKE

Amazake is a Japanese fermented food that has been enjoyed for many years because of its nutritious benefits. It is not only high in nutrients such as vitamin B, essential amino acids and naturally occurring glucose, but also boosts immunity, improves gut health, and has anti-aging effects. Let’s review the nutritional components of Amazake.

  1. EnzymesNon-pasteurized amazake made from Koji contains over 100 kinds of enzymes. The enzymes encourage the digestion very well, so you need it to break down fat, sugar, etc etc.

  2. VitaminsAmazake is rich in Vitamins. There are the reason why Amazake is called as anti aging foods.
    ・Vitamin B1: Fatigue recovery, Stress relief
    ・Vitamin B2: Maintaining tissues 
    ・Vitamin B6: Maintaining immune function and mental stability
    ・Niacin: Supporting the nervous system, digestive system and skin

  4. ErgothioneineErgothioneine is one of the amino acids. It is a powerful antioxidant, protects skin cells from oxidative damage and is anti-aging.

  5. Kojic AcidKojic acid is only made from Koji. It inhibits the production of melanin in the skin, helping to reduce skin discoloration and can be found in cosmetic products. It is also high in antioxidants and good for anti-aging.

  6. Ferulic AcidFerulic acid also is a powerful antioxidant. It has UV absorption properties and suppresses photo-aging of the skin.
       
  7. OligosaccharideOligosaccharide is produced by an enzyme of Koji. Oligosaccharide will reach the intestine without being digested by the stomach. It becomes food for beneficial bacteria in the intestine. 

  8. Dietary Fiber 
    Koji Amazake contains a lot of dietary fiber, so it can improve the intestinal environment and improve bowel movements and elimination.

KOJI-KIMUCHI

KIMUCHI is originally from south Korea, but in japan, we eat a lot.( sometimes more than SUSHI I would say).

Our KIMUCHI is different from Korea’s kimuchi, in terms of the level of spicy and the ingredients.

I make KIMUCHI with home made KOJI, to encourage the fermentation and the mild taste. I do not use fish sauce or shrimps as normally do.

We love to eat with rice, or noodle, or just as it is accompanied with beer.
